Pumpkin Soup
Yield approximately 9 pints
6 pounds pumpkin chopped and sliced
6 medium sized onions chopped
6 ribs celery
Saute vegetables in 4 tablespoons oil for a few minutes.
Add boiling chicken broth enough to cover (about 9 cups) plus
2 teaspoons salt and 1 bay leaf.
Cook until soft.
Allow to cool slightly.
Put through sieve or into blender.
If desired add 1 teaspoon pepper and ¼ teaspoon mace.
Blend and then reheat to almost boil and pour into jars leaving 1 inch head room.
Wipe rims.
Place on caps.
Process for 1 hour and 15 minutes for quarts and 1 hour and 5
minutes for pints.

Hi. My name is Judith. Welcome to my kitchen and the world of storing and canning food. I call it "edible insurance." I have been canning for 20 years and most of the time enjoying the end result, with some learning curves on the way....so I would like to share with you my favorite recipes including short cuts where possible - and when not to. Canning food is really only limited by your imagination....if you can cook it you can can it. All you need is the equipment, the food, and this little book that will guide you through all the steps. The only thing is that, like what you buy off the shelf in cans, the taste and texture will not always be as great as the fresh. But when there's no fresh available, what you've canned will be better than money in the bank. To help those who are new to canning we have included a lot of pictures to illustrate what you need in the way of equipment. To see all the contents of the book while viewing on your computer, and to jump to any page or recipe you desire, just use the "bookmarks" icon or arrow on the left.
